Next Chef Collaboration Begins

Chef James Martin of Bocadillo Market, one of Bon Appetit's Top 10 New Restaurants in 2022, is the next chef in Marisol's new Chef Collaboration Series. The series, which began in May, uplifts local culinary talent in Chicago by showcasing their signature dishes at Marisol.

As a child, Martin fell in love with the food and culture his family shared on trips to visit relatives in South Carolina. Traveling as an adult, Martin was surprised by the similarities between the dishes and ingredients of Spain and those he was familiar with from the American South—prepared rice dishes like Spain's paella and South Carolina's perloo; Spanish-prepared fava beans and low-country-style lima beans. Now, with his team at Bocadillo Market, Martin explores the culinary traditions behind Spanish cuisine and hopes to share a bit of that culinary history with guests through each bite.

For Martin, “Being part of the dining experience at an institution like MCA adds to the cultural experience all people should have while enjoying the food.” His Tempura Acorn Squash Bocadillo with avocado, honey, sobrassada, and goat cheese served on a baguette will be available on Marisol's lunch menu through the end of January.
