Marisol is proud to partner with Chef Ethan Eang Lim of Chicago’s acclaimed Hermosa for a special Winter Chef Collaboration dish, the Hermosa Holiday Stew — pork belly, butterball potato, gai lan, shiitake, and a rich 48-hour chicken stock. Comfort in a bowl, available for lunch and dinner for $24.

Guests can enjoy the Hermosa Holiday Stew through February 2026.

Meet Chef Ethan Eang Lim

A Jean Banchet Rising Chef of the Year Award winner, Ethan’s culinary journey began in his family’s Chicago restaurant after immigrating to the U.S. from Cambodia in the 1980s. Following early career twists through retail and luxury auto, he returned to the kitchen with passion and purpose, training at Kendall College and working at top restaurants like The Aviary, The Office, and NEXT.

In 2015, he opened Hermosa, where the cult-favorite Cambodian Fried Chicken Sandwich reigns by day and family-style Khmer cuisine shines by night. The restaurant has earned recognition from Chicago Magazine, Eater Chicago, and the Chicago Tribune, and was praised by National Geographic as “The Chicago restaurant that most resembles The Bear*…”*

Outside his restaurant, Ethan is a steward of a private wild reserve in Wisconsin — and a devoted cat lover.

Rogers and McFarland first cooked together at New York’s acclaimed Gramercy Tavern. Over the years, they have built impressive careers spanning Michelin-starred restaurants, acclaimed steakhouses, and private chef work for diplomats. In October 2023, the longtime friends opened John’s Food and Wine in Lincoln Park, quickly earning recognition for their thoughtful and refined approach to dining.
